Granola Bowl with Macadamias

A golden, honey-toasted granola loaded with macadamias, poppy seeds, and coconut, baked until perfectly crisp. Spooned over thick Greek yoghurt with fresh blackberries, a drizzle of warm macadamia butter, and a bright hit of lemon zest.

Granola:

  1. Heat oven to 165°C. Mix oats, macadamias, poppy seeds, coconut, lemon zest,

  2. and salt. Warm honey and macadamia butter; stir in vanilla. Toss through dry ingredients.

  3. Spread on a lined tray and bake 15–18 min, stirring once, until golden. Cool completely.

Assemble:

  1. Spoon Greek yogurt into a bowl and drizzle with honey. Top with granola, blackberries,

  2. warm macadamia butter,coconut shavings, extra macadamias, and lemon zest.

Lemon Poppy Seed Granola

1 cup rolled oats

¼ cup chopped macadamias

2 tbsp poppy seeds

2 tbsp coconut shavings

Zest of ½ lemon

1½ tbsp honey

1½ tbsp macadamia butter (or coconut oil)

Pinch sea salt

¼ tsp vanilla extract

Bowl Assembly

¾–1 cup Greek yogurt (plain, full-fat)

½ cup fresh blackberries

1 tbsp macadamia butter, warmed slightly

1–2 tsp honey (to taste)

Extra coconut shavings

Extra chopped macadamias
