Mango & Avocado Salad with Macadamias

Pickle the onion (do this first) Place sliced onion in a heatproof jar or bowl
Pour over vinegar, sugar, salt, and hot water. Stir and let stand 15–30 minutes
Drain before using. Make the dressing. Whisk olive oil, lemon juice, honey, mustard, salt & pepper. Assemble the salad. Arrange rocket on a platter. Top with mango and avocado. Scatter macadamia nuts. Add pickled red onion.
Finish
Drizzle with dressing just before serving
Gently toss or leave layered

3 cups fresh rocket
1 ripe mango, peeled & sliced
2 ripe avocados, sliced
½ cup macadamia nuts, chopped & lightly toasted
Pickled red onion (see below)
Quick Pickled Red Onion
1 red onion, thinly sliced
½ cup white wine vinegar or apple cider vinegar
1 tbsp sugar or honey
½ tsp salt
½ cup hot water
Dressing
3 tbsp olive oil
1½ tbsp lemon juice / lime
1 tsp honey
½ tsp Dijon mustard
Salt & black pepper to taste
